Stewed Celeriac

Makes: 10 portions. Cooking time: 5 minutes.


— 1 kg prepared celeriac
— 100 grams butter
— 1 juice of lemon
— 5 grams salt


(1) Cut the celeriac into half moon shapes approximately 3 cm in length and immediately place them into a saucepan containing water and half the quantity of lemon juice. Blanch for 5 minutes.

(2) Drain the vegetables, place them into a shallow sided saucepan with the butter, the remainder of the lemon juice and seasoning, cover with a lid and stew them until cooked.

(3) Drain the vegetables and serve them slightly dome shape in a vegetable dish.
