Makes: 10 portions. Cooking time: 20 minutes. Oven temperature: 170°C.
Ingredients:
— 10 x 120 grams prepared joined chicken in flour, eggs and breadcrumbs
— 2 lemon cut into wedges
— 10 sprigs of picked parsley
— seasoning
— 1 dl melted butter
Method:
(1) Place the chicken into the hot fat away from oneself.
(2) Fry until crisp and golden turning them during cooking to ensure even cooking and coloration.
(3) Drain the escalopes by placing them onto absorbent kitchen paper. Season to taste with salt.
(4) Arrange the chicken neatly on an oval flat dish. Pour over the melted butter and garnish with segments of lemon and deep fried sprigs of parsley.
Note:
Chicken wings and breast are likely to curl during deep frying. To prevent this cook them lying in single layers in a frying basket with a smaller basket standing on top, although this must be removed to allow even cooking. Even so, it is doubtful if curling can be prevented entirely and should be accepted as a characteristic of the dish.
