Makes: 10 portions. Cooking time: 5 minutes.
— 250 grams nibs of sweetcorn (canned or boiled and drained)
— 2 2ggs
— 100 grams flour
— seasoning of salt and pepper
— 1 dl oil
(1) Mix the sweetcorn and eggs together. Add the flour and mix to a rather stiff mixture. Season to taste.
(2) Heat the oil in a shallow sided pan and place in 10 spoonfuls of the mixture to form a small pancake. Fry until golden on each side and drain.
