Florentine Filling Recipe

Makes: 10 portions.

Ingredients:

— 75 grams finely chopped onion
— 75 grams butter
— 450 grams cooked and chopped spinach
— 1 clove crushed garlic
— 1 egg yolk
— ½ dl demi-glace or Jus Lié

Method:

(1) Melt the butter in a saucepan, add the chopped onions and cook without coloring.
(2) Combine the remaining ingredients.
