Yeast Batter for Deep Fried Fish

Makes: 10 portions. Preparation time: 1 hour.


— 400 grams strong flour
— 15 grams yeast
— 5 dl milk at 37°C
— 5 grams sugar
— 5 grams salt


(1) Sieve the flour, place into a basin and make a hollow in the centre.
(2) Dissolve the yeast in the milk with the sugar.
(3) Pour the liquid into the hollow and whisk to a smooth batter.
(4) Add the salt and allow the batter to stand in a warm place for about 1 hour to prove before using.

Yeast batter may improve with keeping but do not retain it in a refrigerator below 7 °C if it is required for immediate use.
