What are glazes and how its made?

A glaze is a reduction of a stock by continuous boiling until it becomes a gluey, tacky substance which is highly concentrated in flavor. As it reduces in quantity the stock should be transferred to smaller sized pans. Once reduced the glaze should be cooled and stored in a refrigerator at 7°C in plastic or porcelain containers.

Glazes are used for enhancing the flavor of sauces, stews and other dishes.
