Pasta may be served directly into a soup plate, in an entrée dish of earthenware, stainless steel or silver or a vegetable dish. Parmesan cheese is generally served separately, but the amount used may be restricted if it is sprinkled over the surface of the completed pasta at the time of service.
Alternatively the pasta may be served as follows:
(a) A standard portion may be served in a dish with the sauce along the centre;
(b) A standard portion may be served with the sauce separately in a sauceboat, to be added in the restaurant;
(c) Cannelloni and lasagnas may be served in the dish in which they have been baked, in which case they should be perfectly cleaned for presentation purposes.
