Leaf Spinach in Butter

Makes: 10 portions. Cooking time: 5 minutes.


— 1 kg boiled spinach cooked and refreshed
— 75 grams butter
— seasoning of salt and pepper


(1) Heat the butter in a shallow sided saucepan or frying pan.

(2) Loosen the balls of spinach, cut through once or twice with a large knife and add to the butter, gently separating and incorporating the vegetable with the butter.

(3) Season to taste with salt and pepper from the mill. Toss the spinach until it is reheated and serve slightly dome shape in a vegetable dish.
