— 20 Grilled Flat Mushrooms
— 500 grams Duxelles Mixture
— 50 grams white breadcrumbs
— 50 grams melted butter
(1) Place the duxelles mixture into a piping bag with a star tube. Pipe whirl-shape into the center of the grilled mushrooms.
(2) Sprinkle with breadcrumbs and melted butter. Reheat and gratinate the surface either in an oven or under a salamander grill on a low shelf.
