Makes: 10 portions. Cooking time: ½ hour.
— 1 kg Poached White of Chicken free from skin and bone
— 75 grams butter
— 250 grams Sliced Button Mushrooms cooked in lemon juice and water
— 150 grams red pimento, skinned, pipped and cut into dice
— 6 dl Sauce Suprême
— 600 grams Savoury Rice
(1) Cut the chicken into small pieces on the slant 3-4 mm thick. Place into a shallow sided saucepan with the heated butter and gently reheat.
(2) Add the sliced mushrooms and diced pimento and bind with the sauce. Heat but do not boil.
(3) Serve in an entrée type dish with a border of savory rice.
