Makes: 10 portions. Cooking time: 10 minutes.
1/2 liter milk
1 small onion
1 bay leaf
150 g white breadcrumbs
50 g butter
(1) Infuse the milk and studded onion by bringing the milk to the boil with studded onion. Allow to stand over heat without boiling for 5-8 minutes.
(2) Remove the onion, discard and add the breadcrumbs. Lightly whisk until the bread has absorbed the milk.
(3) Add the butter and season to taste. Correct the consistency which should be rather thick.
If this sauce is too thin it may be thickened by adding additional breadcrumbs; if too thick adjustment is made by adding more hot milk.
