Makes: 10 portions. Cooking time: 2½-3 hours.
— 1½ kg Prepared Leg of Mutton
— 250 grams small whole carrots
— 1 onion studded with a bay leaf and clove
— 1 bouquet garni
— 6 dl caper sauce
(1) Place the meat into a deep sided saucepan and cover with cold water. Bring to the boil and skim thoroughly.
(2) Add the studded onion, whole carrots and bouquet garni. Add the seasoning and gently simmer for the prescribed time.
(3) Carve the meat into slices and neatly arrange on a flat oval type dish moistened with some of the strained cooking liquid. Serve the caper sauce separately.
